I ran out to Walmart the other day with my boys to grab some new pool toys for our next BBQ with friends and thought I’d better grab something to make for dinner. I don’t know about you all but wow are the summers busy- the days are just flying by and I have really been focused on easy, delicious and healthier {especially after an indulgent weekend}. You all know I tend to lean towards Italian inspired flavors so I figured why not here as well- so my Veggie Burger with Mozzarella, Arugula & Red Pepper Mayo came to be.

These veggie burgers pair SO perfectly with peppery arugula, creamy mozzarella and my simple red pepper mayo. My red pepper mayo that I slather on here takes just 30 seconds to throw together! Light mayo, a half a roasted red pepper, 1 small garlic clove, a palmful of parsley leaves, a pinch of salt and pepper- a quick blend and done.
Let me tell ya, these veggie burgers are not just for the vegetarians in your life- no way! This meat loving girl right here absolutely loves these- great texture, great flavor and I can feel good about eating them. They grill up really well too which is a big deal because the last thing I want is my burger falling apart on the grill.

- 4 Count Value Pack MorningStar® Farms Veggie Lovers Burgers
- 4 kaiser rolls- grilled lightly if you like
- ½ cup light mayo
- ½ a marinated roasted bell pepper
- 1 small garlic clove
- small palmful of fresh parsley leaves
- a pinch of salt, a few cracks of black pepper
- fresh mozzarella slices
- arugula
- Preheat your grill to a medium heat.
- In a blender add the mayo, bell pepper, garlic clove, parsley, salt and pepper. Blend for 10-15 seconds until smooth. Set aside.
- Grill the frozen MorningStar® Farms Veggie Lovers Burgers for about 8 minutes per side- be sure it doesn't get too hot and burn.
- Place some arugula on the bottom bun, top with the veggie burger, a few slices of fresh mozzarella and some of the red pepper mayo.

I love MorningStar Farms sausage, but have never tried the burgers. I’m sure they are delicious and I MUST try that red pepper mayo asap! Yum!
