Quick Dill Pickles

These are so incredibly easy, you just might never buy store bought pickles again! A mixture of water, garlic, salt, sugar, vinegar and peppercorns are simmered for 5 minutes. The garlicky goodness is cooled completely then poured overtop sliced pickle rounds and refrigerated for an hour or 2 {or overnight}. They are crisp, slightly salty, perfectly garlicky and just a hint of pepper.

Beer Battered Cheese Curds

These curds are so so so good!!! The batter is really light thanks to the bubbly beer, they are quickly fried and the cheese is just perfectly melted inside! I made a really quick and simple dipping sauce to go along with the curds, mayo, Franks Red Hot and a little garlic powder.

Kid or not, chicken fingers are pretty fantastic and fun! The crushed up pretzel coating is so great; adding an amazing salty crunch. To add a little more flavor to the coating I added in some ranch seasoning too so yea, the flavor is pretty great.

I used a prosciutto & ricotta stuffed tortellini and just wow! The little bit of salty bite that the prosciutto adds to this dish is truly wonderful. The tortellini are simply dipped in an egg wash then into seasoned bread crumbs. They are fried for just a couple minutes per side until golden, crisp and perfect!

Teriyaki Pineapple Wings 

A mix of teriyaki sauce, ketchup, crushed pineapple, garlic, brown sugar, crushed red pepper and a little water. Blend everything then simmer until thickened. Once the wings are done baking, toss them in the sauce and a simple garnish of toasted sesame seeds and sliced scallion.
