Buffalo Cauliflower Bites with Yogurt Ranch Dip | LeMoine Family Kitchen . Easy. healthy and tasty snack that is just perfect for the big game or just to quench that spicy food craving.

I am so excited to share this post with you today! This one has been in the works for months and now I finally get to spill the beans about this top secret recipe post! This is part of a Freaky Friday Recipe Swap that I doing along with an amazing group of blogger friends. We all were assigned a blog to cook/bake from and today we are ALL sharing our posts, and who we had! It’s been TOP SECRET and now I finally get to share this fantastic recipe for Buffalo Cauliflower Bites with Yogurt Ranch Dip from my friend Justine over at Fully Belly Sisters.

I really enjoyed browsing through all the delicious recipes on Full Belly Sisters; especially the Crockpot Pralines and Cream Protein Oatmeal, Cinnamon Brie with Honey Drizzle  and the recipe for Easy, Creamy Homemade Ricotta.  But when I saw these Buffalo Cauliflower Bites I knew this was the one I had to try, especially with the big game coming up this weekend. I am obsessed with anything dipped in buffalo sauce and finding a healthier option for a buffalo style snack was just really exciting for me.

The cauliflower florets are dipped in a very light batter then baked until tender and lightly golden. The buffalo sauce is made the same way any buffalo sauce would be made- hot sauce and butter. Justine’s original recipe was served with a Yogurt Gorgonzola Sauce but I’m not a lover of bleu cheese so I made a slight swap for a Ranch Yogurt dipping sauce. Either way, these are a great healthier treat to serve at any party!

Buffalo Cauliflower Bites with Yogurt Ranch Dip

Ingredients
  • ½ cup water {1-2 Tbsp additional if too thick}
  • ½ cup rice flour
  • 1 tsp garlic powder
  • small head of cauliflower, cut into florets
  • ½ cup hot sauce (I used Frank's)
  • 2T melted butter
  • 1- 5.3 oz container non fat plain Greek yogurt
  • 1½ Tbsp dry ranch mix
Instructions
  1. Preheat the oven to 425 degrees.
  2. In a medium bowl, whisk together the water, flour and dried garlic.
  3. Dip each floret into the batter, letting the excess drip off. Place the florets on a large, parchment-covered baking sheet.
  4. Bake for about 25 minutes.
  5. While they are baking, mix the hot sauce and melted butter together in a small bowl. Once the cauliflower is baked, brush the sauce on both sides of the florets, making sure they are entirely coated. Put cauliflower back in the oven for 8-10 minutes, until the florets are a bit browned and slightly crunchy.
  6. For the yogurt dipping sauce simply mix together the yogurt and dry ranch mix.

    I made these once and thought they were fantastic. Yummy easy to make and healthy. And I love all things spicy. Ps I used Sriracha when I made them. Yum! Yours look like they turned out great!
