Beef Teriyaki Kofta Kebab with Grilled Pineapple

Kofta is traditionally a family of meatball or meatloaf dishes found in some Asian and Middle Eastern cuisines. The meat, spices and ways this dish is served differs depending on the region. Now my recipe today, Beef Teriyaki Kofta Kebab with Grilled Pineapple, is not traditional by any means but a fun twist on a classic. Full of incredible flavor, easy to make and quick!

Asian inspired- lean ground chicken, garlic, cabbage, carrots 🥕, bean sprouts with a simple sauce of soy sauce, sesame oil, brown sugar, grated ginger, crushed red pepper flakes & scallions. Had some extra uncooked fresh egg pasta so those were our noodles 😀

Super easy dinner tonight! One sheet pan... sliced Super easy dinner tonight! One sheet pan... sliced kielbasa, potatoes, red bell peppers & onion seasoned with olive oil, smoked paprika, garlic powder & fresh parsley. 425 degrees for 25-30 minutes. Tomato cucumber salad on the side.
