Cheeseburger Tater Tot Casserole
  • 2 Tbsp olive oil
  • 2 garlic cloves, rough chop
  • ½ small onion {about ½ cup small dice}
  • 1 lb Claytons Organic ground beef
  • ½ cup ketchup
  • 2 Tbsp light brown sugar
  • 2 Tbsp yellow mustard
  • 1 tsp Worcestershire sauce
  • 2 Tbsp water
  • about ½ cup chopped pickles {plus extra for on top}
  • frozen tater tots
  • shredded cheddar
  1. Preheat oven to 425 degrees.
  2. In a skillet, add the olive oil, garlic and onion. Cook until softened.
  3. In a small bowl whisk together the ketchup, brown sugar, mustard, Worcestershire sauce and water.
  4. Add in the beef, breaking up the meat as it cooks. Once cooked most of the way through stir in ¾ of the sauce and chopped pickles. Cook a couple minutes to thicken up.
  5. Add the meat to an 8x8 casserole dish. Sprinkle on a thin layer of shredded cheddar. Layer on the tater tots and another layer of cheddar.
  6. Bake for 25-30 minutes. Top with remaining sauce and some extra chopped pickles.
