Italian Tomato Cucumber Pasta Salad PLUS The Perfect Party Invite
  • 1 lb farfalle pasta, cooked to al dente, drained and cooled
  • 1 large English cucumber, cut into half circles
  • 3 tomatoes, medium dice
  • ½ a small red onion, small diced
  • a palm full of fresh chopped parsley
  • approx. ⅓ cup Italian salad dressing
  • salt & pepper to taste
  1. Cook the pasta to al dente, drain and allow to cool completely.
  2. Toss the cooled pasta in a bowl with the cucumber, tomato, red onion, parsley, dress, salt and pepper. I like to make this the night before serving allowing all the flavors to mesh.
  3. Serve cold.
