Homemade Ricotta Gnocchi

  • 3 cups all purpose flour, plus extra for dusting
  • 2 tsp salt
  • 3 eggs, lightly beaten
  • 2 cups ricotta
  1. In a large bowl mix together the flour and salt.
  2. Make a well in the center and add the eggs and ricotta. Stir until mostly combined.
  3. Turn dough out onto a lightly floured surface and knead for a few minutes. Allow the dough to rest for 5 minutes.
  4. Cut the dough ball into quarters then each piece into quarters.
  5. Dust each lightly with flour. Roll each piece into a log with about a ½" thickness. Cut each log into ½" inch pieces.
  6. Roll each piece on the back of a fork or the gnocchi board. Dust lightly with flour to prevent sticking.
  7. Cook the gnocchi in a large pot of salted boiling water for about 4 minutes or until they float to the top.
