Touchdown Chorizo Queso Dip
  • 1 lb chorizo, casing removed
  • 2 Tbsp olive oil
  • 1 tsp salt
  • 1 tsp garlic powder
  • 1 tsp chili powder
  • 1- 12 oz amber beer
  • 8 oz bag cheddar jack
  • 8 oz cream cheese
  • 1 cup fresh salsa, store bought
  • salsa and scallions to garnish
  • tortilla chips
  1. In a large skillet add in the olive oil, chorizo, salt, garlic powder and chili powder. Using a spoon or potato masher, break up the chorizo as it browns.
  2. Add in the beer and reduce by half.
  3. Stir in the cream cheese and cheddar jack cheeses and simmer for 5 minutes.
  4. Stir in the fresh salsa and simmer another couple minutes.
  5. Garnish with fresh salsa and scallions
