Mixed Berry Muffins
  • ½ cup unsalted butter
  • 1 cups sugar
  • 2 eggs
  • 1 teaspoons vanilla
  • 2 cups all-purpose flour
  • 2 teaspoons baking powder
  • ½ teaspoon salt
  • ½ cup milk
  • additional granulated sugar
  • about 2 cups fresh or frozen berries, rough chop & tossed with a few Tbsp of flour
  1. Preheat oven to 425 degrees.
  2. Cream together butter and sugar with an electric mixer. Add eggs, one at a time, and vanilla and mix until smooth and creamy.
  3. In a separate bowl combine flour, baking powder and salt. Alternately add flour mixture and milk to the creamed mixture (beginning and ending with flour.) Mixture will be thick. Gently fold in berries.
  4. Scoop the batter into a cupcake pan with liners, sprayed with non stick spray.
  5. Sprinkle the tops with a bit more granulated sugar.
  6. Bake at 425 degree for 10 minutes. After 10 minutes of baking, turn oven temperature down to 375 degrees and bake an additional 15-25 minutes until muffins are done in center and a rich, golden brown on top.
  7. Sprinkle with a little powdered sugar before serving if you'd like too!
