Creamy Skillet Corn with Bacon
  • 4 slices of bacon {reserve about 2- 3 tsp of bacon fat}
  • 3 ears of corn, kernels cut off cob
  • 2 oz cream cheese {i used light}
  • ¼ cup milk {i used fat free}
  • scallions
  • fresh cracked pepper
  1. In a large skillet over medium heat add in the strips of bacon and cook until crisp. Remove from pan and crumble once cooled a bit.
  2. Leaving about 2-3 tsp of the bacon fat in the pan, add in the corn kernels and cook until crisp but tender.
  3. Stir in the cream cheese and milk. Cook for a few minutes. to warm everything through. Finish with lots of fresh snipped scallions and pepper to your liking.
