Brushetta Grilled Chicken
  • 6 boneless, skinless chicken breasts
  • 4 large tomatoes, small dice
  • 2 cloves of garlic, finely chopped
  • a couple good handfuls of chopped fresh basil
  • ¼ cup olive oil
  • 2 Tbsp balsamic vinegar
  • salt
  • pepper
  1. Drizzle a little olive oil no the chicken breasts and season with a bit of salt and pepper. Grill on a hot grill for about 4 minutes per side {cooking time will vary because of thickness of the chicken breast and the temperature of the grill}. Cook until the juices run clear and the meat is just cooked through. Set aside.
  2. Toss together the diced tomatoes, garlic, basil, ¼ cup olive oil, balsamic vinegar and salt and pepper to taste. Serve over the grilled chicken.
