Dill & Garlic Marinated Cucumber Salad
  • 2 Tbsp sugar
  • ¼ cup very hot water
  • ½ cup white vinegar
  • 2 Tbsp canola or vegetable oil
  • 2 Tbsp chopped fresh dill
  • 1 Tbsp garlic powder
  • 1 Tbsp salt
  • 2 Tbsp black pepper {NOTE: I added significantly less to keep the spice level lower}
  • 8 mini cucumbers {or 4 regular cucumbers}, thinly sliced
  • 1 small red onion, thinly sliced
  1. Whisk sugar and very hot water in a bowl until sugar is dissolved.
  2. Add oil, vinegar and seasonings and whisk again.
  3. Add the sliced cucumbers and red onion and stir to coat. Refrigerate overnight to allow flavors to marry. Serve the next day.
