Easy Black Bean Soup
  • 1 small red onion, small dice
  • 1 red bell pepper, small dice
  • 4 Tbsp olive oil
  • 4 cloves of garlic, rough chop
  • 2 cans black beans, rinsed and drained
  • 32 oz vegetable broth
  • 1 tsp cumin
  • 1 tsp chili powder
  • 2 tsp salt
  • pepper to taste
  • Optional toppings:
  • shredded cheddar
  • fresh cilantro
  • diced tomato
  • sour cream
  • lime wedge
  • tortilla strips {1 corn tortilla, thinly sliced and dry toasted in a pan}
  1. In a large pot over medium heat add in the olive oil, red onion and bell pepper. Cook until softened.
  2. Add in the garlic, salt, pepper, cumin and chili powder. Cook for a minute or two.
  3. Add in the black beans and broth. Bring up to a boil then lower and simmer for about 20 minutes.
  4. Using a hand blender, blend the soup until smooth. Simmer for another 15 minutes or so, or until the desired thickness.
