Corn & Chive Fritters
  • 3 cups fresh corn kernels
  • 2 heaping Tbsp freshly snipped chives
  • 1 cup flour
  • ⅓ cup grated pecorino cheese
  • 1 Tbsp salt
  • ½ tsp pepper
  • 1 tsp baking powder
  • 2 eggs
  • ¾ cup milk
  • light olive oil for frying
  • honey to drizzle
  1. Stir together the corn, chives, flour, salt, pepper, baking powder and pecorino until well combined.
  2. In a small bowl whisk together the eggs and milk. Stir into the dry ingredients until just combined.
  3. Heat a large frying pan over medium heat with just enough olive oil to coat the bottom of the pan.
  4. Using a small cookie scoop {like a small version of an ice cream scoop}, scoop a few fritters into the pan just like you are making a pancake. Cook for a few minutes per side until lightly golden.
  5. Test one out to make sure its cooked in the center- you may need to adjust the flame. Place the cooked fritters onto a paper towel lined dish just to soak up any excess oil. Continue cooking the remaining batter.
  6. Platter up the fritters and give them a generous drizzle of honey and some extra snipped chives.
