Baked Maple Blueberry Oatmeal
  • 3 cups quick cooking oats
  • 2 eggs
  • ⅓ cup real maple syrup
  • 1¼ cups fat free milk
  • 2 tsp vanilla
  • ½ stick unsalted butter, melted
  • 1 pint fresh blueberries
  • cinnamon & powdered sugar for sprinkling
  1. Preheat your oven to 350 degrees.
  2. In a bowl stir together all the ingredients until well combined.
  3. Spray a 12x8 baking dish with non stick spray and pour the mixture in. Spread out evenly.
  4. Bake for approximately 40 minutes or until set and lightly golden.
  5. Sprinkle the top with cinnamon and a little powdered sugar.
  6. Serve with warm maple syrup.
