Baked Pears with Yogurt & Blackberry Compote
  • 3 pears
  • cinnamon
  • 6 oz blackberries
  • 2 Tbsp sugar
  • 2 Tbsp water
  • vanilla yogurt
  1. Preheat your oven to 350 degrees.
  2. Place the pears in a baking dish and sprinkle with a little cinnamon. Add just a little water to the bottom of the pan to prevent the bottoms from browning. {My pears were ripe so I didn't add sugar. If yours are a little on the hard side, you can sprinkle a little sugar on top as well to sweeten them.}
  3. Bake for approx. 20-24 minutes depending on how firm or soft you prefer them.
  4. While they are baking you can make the compote. Add the blackberries, sugar and water to a small pot. Using a potato masher, smash the berries down a bit. Simmer for about 15 minutes, stirring occasionally to prevent burning, until thickened up.
  5. To serve add some yogurt to a bowl, topped with the warm pear and the compote.
