Harvest Salad with an Apple Cider & Honey Vinaigrette
  • Perdue Simply Smart Fully Cooked Frozen Grilled Chicken Strips
  • 1 bag baby spinach
  • red grapes, cut in half
  • granny smith apple, thinly sliced {tossed in lemon juice to prevent browning}
  • dried cranberries
  • walnuts, roughly chopped
  • ⅓ cup apple cider vinegar
  • ⅔ cup olive oil
  • ⅛ cup honey
  • salt and pepper to taste
  1. In a large skillet, add a drizzle of olive oil or olive oil spray and add the desired amount of chicken. Warm for 3-5 minutes.
  2. On a large platter or in a large salad bowl toss together the baby spinach, apples, grapes, dried cranberries and walnuts. Top with the grilled chicken.
  3. In a jar or small bowl combine the apple cider vinegar, olive oil, honey, salt and pepper. Add the desired amount of dressing onto the salad and toss to lightly coat.
