Grilled Vegetable Quesadilla with Honey :: 5 Ingredient Meals
  • corn tortillas
  • 12 oz freshly shredded white cheddar
  • 3 zucchini
  • 2 ears of corn on the cob
  • honey
  • salt & pepper
  • olive oil
  1. Shuck the corn. Slice the zucchini lengthwise into 4 or 5 slices. Drizzle with a little olive oil, salt and pepper.
  2. The zucchini should only need 2-3 minutes per side. The corn will need a little longer, give it a slight char all the way around.
  3. Dice the zucchini and cut the corn off the cob.
  4. Lay out some tortillas. Sprinkle with a little cheddar, some zucchini, corn and then a little more cheddar. Top with another tortilla. Repeat with remaining ingredients {I made about 10 quesadillas}.
  5. I cooked these on an electric griddle until golden on each side. You can place them all on a lined baking sheet and bake at 425 degrees for about 10 minutes.
  6. Before serving, drizzle with honey.
