Vegetable Cream Cheese
  • 8 oz cream cheese {I used light cream cheese}
  • ¼ cup finely minced carrots in a food processor
  • 3 heaping Tbsp finely snipped chives
  • ¼ cup finely diced green bell peppers
  • salt & pepper
  1. Place the finely minced carrots onto a clean dish towel and squeeze out any excess liquid.
  2. Place the cream cheese, carrots, chives, green bell peppers, salt and pepper in a bowl. Stir until well combined.
