Lemon Thyme Ricotta
  • 15 oz ricotta cheese
  • zest of 1½- 2 lemons
  • ½ tsp fresh lemon juice
  • 1 heaping tsp fresh thyme leaves
  • salt & pepper
  • 1 tsp Barbara EVOO
  • sweet potato chips to serve
  1. To a bowl add the ricotta, lemon juice, lemon zest, thyme, salt & pepper.
  2. Stir to combine and add to a serving dish.
  3. Drizzle with the EVOO, garnish with a little extra pepper, thyme and lemon zest.
  4. Serve sweet potato chips or pita chips on the side.
