Summer Squash & Kale Soup

Ingredients
  • about 32-36 cups of vegetable broth
  • ¼ cup tomato paste
  • 2 large zucchini, diced
  • 1 large yellow squash, diced
  • 3 carrots, diced
  • 1 big bunch of kale, roughly chopped
  • 1 cup dry 16 bean soup mix {I used Goya brand}
  • 1 cup dry barley
  • salt & pepper to taste
Instructions
  1. Add the broth, tomato paste and dry beans to a large pot. Season well with salt and pepper. Simmer for 30 minutes.
  2. Add in the barley, carrots and kale to the pot. Simmer for another 30 minutes.
  3. Add in the zucchini & squash and simmer until everything is cooked through.
