The Best Vanilla Cupcakes with Vanilla Buttercream
Serves: 1 dozen
  • For the Vanilla Cupcakes:
  • 1⅔ cups all purpose flour
  • 1 cup sugar
  • ¼ tsp baking soda
  • 1 tsp baking powder
  • ¼ tsp salt
  • 1½ sticks unsalted butter, room temp
  • 3 egg whites
  • 1 Tbsp plus 1 tsp vanilla extract
  • ½ cup sour cream
  • ½ cup milk
  • For the Vanilla Buttercream:
  • 2½ sticks butter, room temp
  • 3 cups powdered sugar
  • 2 tsp vanilla
  • ¼ cup heavy whipping cream
  1. Preheat your oven to 350 degrees.
  2. In a large bowl, mix together the butter and sugar with a hand mixer until smooth and creamy.
  3. Add in the vanilla and egg whites and again mix until light, fluffy and well combined.
  4. In a small bowl mix together the flour, baking soda, baking powder and salt.
  5. Add half of the dry ingredients into the butter mixture and mix until mostly combined.
  6. Add the sour cream and milk to the mixture, until mostly combined.
  7. Go ahead and add in the remaining dry ingredients and mix again until mostly combined. Using a spoon, gently stir until well combined.
  8. Fill the cupcake liners most of the way up {they only rise a little bit}.
  9. Bake for approximately 20-22 minutes, until a toothpick comes out clean. Allow to cool completely.
  10. For the buttercream, in a large bowl add the butter, powdered sugar, vanilla and whipping cream. Whip with a hand mixer until light and fluffy {will take about 5-6 minutes depending on the strength of your mixer}.
  11. Decorate the cupcakes using a piping bag with your favorite tip. I decorated with some non pareil sprinkles.
