Mini Strawberry Cheesecakes
  • ¾ cup graham cracker crumbs
  • ¼ melted butter
  • 1 lb strawberries, chopped
  • ¼ cup water
  • ¼ cup sugar
  • 2- 8 oz pkg greek yogurt cream cheese, room temp
  • ¼ cup powdered sugar
  • 2 eggs, room temp
  • 2 Tbsp heavy cream
  • whipped cream
  • sprinkles
  1. Preheat oven to 350 degrees.
  2. In a pot, over medium low heat, add the strawberries, water and sugar. Cook down until thickened to the consistency of jam. Be sure to stir occasionally to prevent burning. Cool completely.
  3. In a small bowl, stir together the melted butter and graham cracker crumbs.
  4. Press the graham cracker mixture into the bottom of 12 cupcake liners in a cupcake pan. Using a shot glass or something similar, press the crust firmly down.
  5. In a large bowl add the cream cheese, eggs, powdered sugar, heavy cream and the cooled strawberry mixture.
  6. Using a hand mixer, mix until well incorporated, smooth and creamy.
  7. Pour the mixture into the cupcake liners, as evenly as possible.
  8. Bake for approx. 16-18 minutes until the filling is mostly set. Cool Completely. Top with whipped cream and some sprinkles.
