Breakfast Blueberry Oatmeal Cookies :: LouAna Coconut Oil
  • ¼ cup LouAna Coconut Oil {as a solid, not liquid}
  • ½ cup pure maple syrup
  • 1 egg
  • 2 tsp vanilla
  • 2 cups quick cooking oats
  • ¾ cup flour (whole wheat can be used)
  • 2 tsp baking powder
  • 2 tsp cinnamon
  • ¼ tsp salt
  • 4 oz fresh blueberries
  1. Preheat your oven to 375 degrees.
  2. In a large bowl mix, with a hand mixer, the coconut oil and maple syrup until well combined.
  3. Add the egg and vanilla and mix for about a minute until everything is well combined again.
  4. In a small bowl stir together the oats, flour, baking powder, cinnamon and salt.
  5. Add the dry ingredients into the wet and mix until just combined.
  6. Using a rubber spatula gently mix in the blueberries.
  7. Using a medium sized cookie scoop, scoop out the cookies onto a parchment lined baking sheet, about an inch apart. Sprinkle a little cinnamon over top each cookie.
  8. Bake for approx. 12-14 minutes.
