Southern Style Cornbread
  • 1½ cups low fat milk
  • ½ cup of light cream
  • 3 eggs
  • 5 Tbsp butter, melted & cooled
  • 3 cups stone ground cornmeal
  • ½ cup flour
  • ¼ cup sugar
  • 2 tsp baking powder
  • 1 Tbsp salt
  • 1 tsp pepper
  • 1 can corn, drained
  1. Preheat your oven to 350 degrees.
  2. In a bowl whisk together the milk, cream, eggs and butter until well combined.
  3. In another bowl mix together the cornmeal, flour, sugar, baking powder, salt and pepper.
  4. Add the dry ingredients into the wet mixture until mostly combined.
  5. Stir in the can of corn until evenly combined.
  6. Prepare a 9x13 baking dish with a little non stick spray. Pour the cornbread mixture into the pan and bake for approx 45 minutes. It should be lightly golden around the edges and if a toothpick inserted it should come out clean.
