Pancetta, Lettuce and Tomato with Pesto Mayo
  • 6- 8 slices of pancetta
  • 4 Tbsp light mayo
  • 1 Tbsp basil pesto
  • sliced bread
  • sliced tomatoes
  • romaine lettuce
  1. In a pan with a little olive oil brown the pancetta on both sides until nice and crisp.
  2. Mix the mayo and pesto in a bowl. Slather on some toasted bread.
  3. Layer on your lettuce, tomato and crisp pancetta.
