Tomato Basil Jam

Ingredients
  • 10 Tomatoes on the vine, diced
  • ½ small Spanish or yellow onion, diced
  • Big handful basil leaves
  • ¼ cup sugar
  • 2 tsp course kosher salt
Instructions
  1. Add everything to a pot and simmer on low for 2-3 hours until thickened. Stir occasionally to prevent burning.
