My husband and I are finishing day 10 of our 24 Day Advocare challenge and I have to tell ya, we are feeling great!! I’ve said it many times here that healthy does not mean boring and bland, I promise! Keep the food real, packed with lean meats, lots of hearty veggies, whole grains and complex carbs and you’ll be amazed at how great you will be feeling. These Spinach, Roasted Pepper & Mozzarella Chicken Burgers are incredible tasty, filling and good for ya! And NO I don’t believe in depriving yourself so in moderation, go ahead, enjoy a sweet treat.

For the ingredients to this chicken burger I honestly just used what I had on hand so go ahead and be creative because the combos are endless! I used lean ground chicken, some rough chopped baby spinach, chopped roasted peppers, shredded mozzarella, pesto, garlic powder, salt and pepper. I love using my little cast iron skillet for chicken burgers because they require very little oil and get good and hot giving a good browning to the burger.

To keep the meal healthy I served mine with sautéed broccoli rabe {the remainder of the bunch from this pasta dish} and baked sweet potatoes. If you wanted to serve it more like a traditional burger you could do whole grain bread, some fresh arugula and a thick tomato slice. Either way, this chicken burger is juicy and packed with great flavor!

Ingredients
  • 1 lb lean ground chicken
  • 1 handful of baby spinach, rough chop
  • 2 tbsp chopped roasted red peppers
  • ½ teaspoon salt
  • ½ tsp garlic
  • 1½ tsp pesto
  • ½ cup shredded mozzarella
Instructions
  1. Mix all the ingredients in a bowl until well combined.
  2. Press the mixture and score into 4 even portions using a spatula or spoon.
  3. Cook the burger patties for about 4-5 minutes per side in a lightly oiled cast iron skillet. The cooking time will vary depending on the thickness of the burger and heat.
