Potato Salad with Dijon Vinegar Dressing  | LeMoine Family Kitchen. Great side dish for your summer BBQs.

Potato Salad is a classic summer entertaining side dish. There are so many amazing recipes out there and so many varieties and I love them all! This past weekend we had family over and I wanted to make something that would be okay out in the heat for a bit without worrying about it spoiling. I made this Potato Salad with Dijon Vinegar Dressing and it was a big hit! 

This is a really simple recipe. I used red potatoes, they seem to hold together very well and I love the great color that the skin adds. Some diced green bell pepper, scallions and a quick dressing of red wine vinegar, dijon mustard, garlic powder, salt and pepper. A handful of ingredients but such great flavor! This potato salad is much lighter then one with mayo like my All American Potato Salad.. but hey variety is the spice of life.

Potato Salad with Dijon Vinegar Dressing

Ingredients
  • ~4 lbs of red potatoes, quartered
  • 1 green bell pepper, small dice
  • a few heaping Tbsp snipped scallions
  • 4 Tbsp dijon mustard
  • ½ cup red wine vinegar
  • 2-3 Tbsp olive oil
  • 1½ tsp garlic powder
  • 1½ tsp salt
  • pepper to taste
  • chopped parsley to garnish
Instructions
  1. Place the potatoes into a pot of cold water, bring to a boil and cook until fork tender. You don't want to overcook them because they will start to fall apart when mixing everything.
  2. Drain the potatoes and cool slightly.
  3. In a bowl whisk together the dijon mustard, olive oil, red wine vinegar, garlic powder, salt and pepper.
  4. In a large bowl toss together the potatoes, the bell peppers, scallions and dressing. Coat everything well. {NOTE: depending on how hot the potatoes are and the exact weight you may need to add a little extra drizzle of olive oil to keep things moist}
  5. Garnish the potato salad with some fresh chopped parsley.
