Simple, uncomplicated and so flavorful. Lemon Thyme Ricotta is a creamy, bright and super easy dip. With something like this, it is all about the fresh ingredients. Ricotta, lots of lemon zest, lemon juice, fresh thyme, salt, pepper and finished with an incredibly delicious high quality extra virgin olive oil. Served with sweet potato chips, this is a great party starter or afternoon snack!
When you make something that only has a handful of ingredients in it it is that much more important to use high quality ingredients because you are going to taste each and every element. There are layers of flavor is this that I just love!
The brightness that the lemon zest and freshly squeezed lemon juice adds is so incredible. Fresh thyme is one of my favorite herbs, it has a citrus floral like flavor that pairs so perfectly with lemon. A little salt and pepper to season the ricotta and the finishing touch that gives is even more WOW factor, Barbara Extra Virgin Olive Oil*. I mean look at the gorgeous rich color of that EVOO, it is absolute perfection!!! This EVOO is super high quality making it perfect as a finishing oil for salads, dipping, a drizzle overtop bruschetta and desserts too!
