Andouille Hash & Eggs

Andouille Hash & Eggs | LeMoine Family Kitchen . Roasted Andouille, Potatoes & Peppers Hash served with eggs. Perfect flavorful breakfast or brunch!

 

During the week my breakfast is typically something quick and something that I can grab and go with. On the weekends however, I love taking some extra time to make a special breakfast or brunch for the family. This dish, Andouille Hash & Eggs was just perfect! Roasted andouille sausage, potatoes and red bell peppers simply seasoned with salt and pepper. I served some sunny side up eggs over top and finished this beautiful dish with fresh scallions for a pop of flavor and color. 

We’ve all heard it before, breakfast is the most important meal of the day. You’ve been asleep for a good 7 or 8 hours {hopefully} and now its time to fuel your body and get going. I love this Andouille Hash & Eggs because it is so easy to make, the flavors are fantastic and you’ve got your protein, starch and veggie covered! Have you had andouille sausage? Its a spicy, smoked sausage that is frequently used in Creole cooking. This is a great hearty start to your day and will keep you feeling full for hours.

Ingredients
  • 2 links andouille sausage {I used Johnsonville brand}, sliced
  • 4-6 yukon gold potatoes, large dice
  • 1 large or 2 small red bell peppers, large dice
  • eggs
  • scallion
  • olive oil
  • salt & pepper
Instructions
  1. Preheat your oven to 385 degrees.
  2. Place the sliced andouille, diced peppers and potatoes onto a lined baking sheet. Drizzle with a little olive oil and season with salt and pepper.
  3. Cook for approx. 25 minutes or until the andouille is a bit browned and the potatoes are cooked through.
  4. I then went ahead and put a bit of the hash into a frying pan, over medium low heat, with just a small drizzle of olive oil to prevent sticking. I cracked a couple of eggs over the hash and covered the pan until the eggs were cooked to my liking, about 4-5 minutes.
  5. If you are cooking for several people you can actually crack some eggs right over the hash on the baking sheet and pop back in the oven to cook the eggs.
  6. Garnish with fresh sliced scallions.

      Oh it certainly adds great flavor! You could try using regular sausage and seasoning with some smoked paprika.
