After a super busy and fun weekend celebrating my husbands birthday, I was really looking for something simple to make for dinner. Pizza is a great go to… no no not delivery kind, make your own delicious and beautiful pizza. I really love to work in a contrast of flavors, textures and colors and this BBQ Chicken, Apple & Cheddar Pizza hits on it all! The crust is a whole grain flatbread that crisps up beautifully {I used Flatout Bread, you can also use a tortilla or halved pita}. Tangy and sweet BBQ sauce, rotisserie chicken {thank you grocery store!}, tart granny smith apples, sharp Vermont white cheddar and crisp red onions! Some sliced scallion to add a burst of brightness before serving. The flavors all work so wonderfully together. This will definitely be a go to weeknight meal in our house!
Ingredients
- Flatout bread
- BBQ sauce of your choice
- granny smith apple, peeled & sliced
- store bought cooked rotisserie chicken, breasts rough chopped
- Vermont sharp white cheddar
- red onion, thinly sliced
- sliced scallion for garnish
Instructions
- Preheat your oven to 450 degrees - with a pizza stone if you have one, if not place a baking sheet in the oven to heat up.
- Assemble the pizza on a pizza peel.
- Brush the Flatout bread with a good amount of BBQ sauce. Layer on some of the chopped chicken, sliced apple, red onion and cheddar.
- Pop into the oven for about 8-10 minutes until the bread is crisp and the cheese melted.
- Garnish with some sliced scallion and enjoy!
