Asian Chicken Lettuce Wraps

I thinks its time for a recipe that isn’t pie! I mean I love me some pie and the peach pie & apple pie recipes I posted over the last few days were fantastic but lets take a little break from dessert and get to these Asian Chicken Lettuce Wraps! Sure, they are a little, ok a lot messy to eat but so worth it! Lean ground chicken in a simple homemade asian sauce, a crunchy piece of romaine lettuce, topped with carrot matchsticks, shredded red cabbage and cilantro! This one is so incredibly easy to throw together on a weeknight and all those colors means were on the healthy side of things. 

Last week I had posted a little poll on LeMoine Family Kitchens Facebook Page to see which recipe you’d like to see me make next and this is the one that got the most votes.  It was a close race and I ill definitely be making the other options soon, because they all sound way too delicious not to make. So keep a look out for Chicken Pesto Crepes, Oatmeal Cookie Sandwich with Peanut Butter Buttercream and Teriyaki & Pineapple Sloppy Joes!

Asian Chicken Lettuce Wraps

Ingredients

  • 2 lbs lean ground chicken
  • 6 cloves garlic, chopped
  • 6 oz shitake mushrooms, chopped
  • 1/2 cup low sodium soy sauce
  • 1/3 cup duck sauce
  • 3 Tbsp hoisin sauce
  • 1 Tbsp sesame oil
  • 1/4 cup water
  • scallions, sliced
  • romaine or iceberg lettuce {iceberg is a better vessel but romaine has more nutrition}
  • matchstick carrots {or shredded if you can't find
  • shredded red cabbage
  • fresh cilantro

Instructions

  1. In a bowl stir together the soy sauce, water, duck sauce, hoisin and sesame oil.
  2. In a large saute pan, over medium heat, add the olive oil, garlic and mushrooms. Cook until the mushrooms have cooked down a bit and the garlic is fragrant.
  3. Add in the chicken and break up the meat as it is cooking with either a wooden spoon or my favorite a potato masher.
  4. When the chicken is mostly cooked through go ahead and stir in the sauce and cook a few more minutes until the chicken is cooked through.
  5. Shut the heat and stir in a couple handfuls of scallion.
  6. I served all the fixings on a platter... the lettuce leaves, carrots, shredded cabbage and cilantro.
  7. Add a bit of chicken to the lettuce and top with all those gorgeous colored veggies.

    I have tried 3 different recipes for the asian chicken wraps with no luck. I love the ones at P.F. Changs. Every recipe I see always has 5-spice in it which I just hate! Yours doesn’t so I am definitely pinning and trying it!
