I may enjoy the indulgences of cookies, wine and ice cream on weekends but during the week I am pretty good about sticking to eating good and healthy! In the summer especially, salads are my go to! I’m not talking boring lettuce, tomato, cucumber sort of salads. I’m talking tons of fresh flavors, bright colors, and very satisfying sort of salad! This Turkey Taco Salad with Lime Vinaigrette totally hits the spot! Lean ground turkey cooked up with red onion and bell pepper, seasoned with chili powder, cumin, oregano and garlic powder. Crunchy romaine lettuce, black beans, juicy tomatoes, black olives and to top it all off, some crisp tortilla strips and a very simple lime dressing! Delicious!!!
Heres the funny thing about salads. Some restaurants have a real skill at killing a salad, as in making it less healthy to eat a salad then a big fat cheeseburger. The benefit of making this awesome salad at home is that you get to control what goes in heck its so much cheaper! This recipe gives you a lot of delicious meat so if you have leftover turkey, its great over brown rice and a side of grilled vegetables. Also great for a taco filling!
Ingredients
- 2 lbs lean ground turkey
- 3 Tbsp chili powder
- 2 Tbsp oregano
- 2 Tbsp garlic powder
- 2 Tbsp salt
- 1 Tbsp cumin
- 1 tsp cayenne pepper, optional
- 1 small red onion, small dice
- 2 bell peppers, small dice
- romaine lettuce, rough chop
- black beans, rinsed and drained
- black olives
- tomatoes
- 3 corn tortillas,cut in half then into strips
- juice of 4 limes
- olive oil
- 1-2 Tbsp honey
Instructions
- In a large pan, over medium heat, add a couple Tbsp olive oil. Add in the bell peppers and red onion. Cook for a few minutes until slightly softened.
- Add in the ground turkey, chili powder, garlic powder, cumin, oregano, salt and cayenne pepper to taste. Using a wooden spoon or potato masher and break up the turkey as it is cooking, stirring occasionally. Cook through and set aside.
- To make the corn tortilla strips, preheat the oven to 385 degrees. Toss the cut corn tortilla strips with a spritz of olive oil, salt and garlic powder. Place onto a baking sheet and bake for about 5-8 minutes or until lightly golden.
- The lime vinaigrette is so easy! Add the lime juice and equal parts olive oil into a mason jar. Add the honey and a little salt and pepper. Give it a good shake to combine.
- Lets assemble! Romaine lettuce, topped with the turkey, some tomato, olives, beans, tortilla strips and a drizzle of vinaigrette.

I love taco salad and this sounds like a good one. I don’t usually put black olives in my taco salads, but i like them on pizza so I’ll have to try it sometime.
