Broccoli & Cheddar Stuffed Chicken Wrapped in Bacon

The name pretty much says it all! Broccoli & Cheddar Stuffed Chicken Wrapped in Bacon… an incredible simple meal with some great flavors! Broccoli and cheddar is a pretty classic combo from quiche to soup, heck even to a stuffed bread so why not roll it up with chicken breasts? Finished off with a strip of smoky Applegate turkey bacon {the only bacon I use at home} wrapped around the outside to liven things up a bit. Pop into an oven for 20 minutes and enjoy! This really is such a perfect weeknight go to meal because it is that easy to make and you can use them same method with different fillings week after week! Serve alone with a simple baked potato, side salad or favorite vegetable and you are good to go!

Broccoli & Cheddar Stuffed Chicken Wrapped in Bacon

Ingredients

  • 8 thin sliced chicken breasts
  • broccoli florets, steamed & chopped
  • white cheddar, shredded or cut into small slices
  • Applegate turkey or Sunday bacon

Instructions

  1. Preheat your oven to 375 degrees.
  2. Lay out a slice of bacon and then a piece of chicken breast on top.
  3. Place a piece or two of cheddar on top.
  4. Add some finely chopped broccoli.
  5. Roll up the chicken and secure with a couple of toothpicks.
  6. Place onto a parchment lined baking sheet and bake for approx 20 minutes {cooking time may vary depending on thickness of chicken}.
