Golden Carolina Pulled Chicken Sandwich with Broccoli Slaw & Cilantro :: Gourmet Warehouse

That along with the crunch of the broccoli slaw and burst of flavor from the cilantro, its perfection on a bun!

Last week the kind people from Gourmet Warehouse asked if i’d be interested in trying out a couple of their products to use in a recipe. Have you heard of that site? I hadn’t either until now and I have to say, I am a fan! They carry a great variety of BBQ sauces {like the Golden Carolina BBQ Sauce I use here}, marinades, injectables and spice rubs! See what they are doing here, making a super flavorful dinner on a busy day just got a little easier!

Besides enjoying the products, I love that all the products are made right here in the USA; Hilton Head NC to be exact. They were super generous and sent along with the Carolina Sauce their Honey Garlic Marinade and the Applewood Smoke Spice Rub {which i’ve got rubbed all over a rack of ribs slow cooking in the oven asI type and it smells incredible!}.

Heres what I did with the Golden Carolina BBQ Sauce… I slow cooked chicken breasts in broth simply seasoned with half a red onion, garlic cloves and a couple bay leaves. After the chicken was cooked I shredded it and tossed it with the sauce. Oh My Goodness!!!! The chicken was incredible, the sauce added the perfect balance of honey, apple cider vinegar and mustard! A little acidic, a little sweet and the perfect mustard kick!

To top the chicken I made a simple broccoli slaw and used my Homemade Garlic & Parsley Aioli as the dressing. Some cilantro leaves finish this sandwich off perfectly! I love the combination of all these flavors, they work incredibly well with each other! We literally couldn’t stop saying how good this sandwich was as we were eating.

Golden Carolina Pulled Chicken Sandwich with Broccoli Slaw & Cilantro :: Gourmet Warehouse

Ingredients

  • 5-6 large chicken breasts
  • 1 box organic chicken broth {32 oz}
  • 2 bay leaves
  • 1/2 a red onion
  • 4-6 garlic cloves, crushed
  • 1 bottle of Gourmet Warehouse Golden Carolina BBQ Sauce
  • 1 bag broccoli slaw
  • 1 cup loosely packed shredded red cabbage
  • 3/4- 1 cup of Garlic & Parsley Aioli [http://lemoinefamilykitchen.com/2014/06/homemade-garlic-parsley-aioli/]
  • cilantro leaves
  • rolls

Instructions

  1. Lets start with the slaw because I like to allow it time to chill. Mix together the bag of broccoli slaw and the red cabbage in a bowl.
  2. Stir in enough of the aioli just to coat, I don't particularly care for a slaw to be overly dressed. Season with salt and pepper to taste.
  3. Refrigerate for at least a couple hours.
  4. Add the chicken breast to a slow cooker along with the chicken broth, bay leaves, red onion and garlic cloves. Season with salt and pepper.
  5. Set to low and cook for approx 6 hours.
  6. Remove the chicken from the liquid and once cool enough to handle, shred using two forks.
  7. Warm the Golden Carolina BBQ Sauce a bit then toss with the shredded chicken until nicely coated.
  8. Add a good helping of the shredded chicken to the roll, topped with some of the broccoli slaw and some fresh cilantro.
