S’mores Cookies {aka cookie heaven}

Is it crazy that I’m starting my Super Bowl Eats Week with dessert??? Nah! Trust me, you will look like a rock star if you serve these up on the big game day! If it were possible to read with your eyes closed I’d start this one with “close your eyes and imagine…” so instead imagine while you read. Lets pretend we aren’t getting hit with that polar vortex again this week and imagine that its a warm summer night. You’re hanging out around a campfire or fire pit with some friends, you’re telling stories, laughing, having a great time but whats missing? S’mores of course!!!

A childhood favorite for me, there is just something so amazing about biting into a s’mores and the warm chocolate and gooey marshmallow oozing out the sides. I know, I know, YUM!!!  Now, since it isn’t actually summer and theres no way i’m sitting outside in 10 degree weather even if it is fireside why not turn a nostalgic summer treat into an incredible cookie, yes S’mores Cookies!

I have to now quote my hubby because its totally a big deal {background: my darling hubby loves to make fun of my cookies; either too flat, too cake like, not sweet enough, not enough chocolate, blah blah blah but he always eats them anyhow}. So tonight I walk over to him with a fresh out of the oven S’mores Cookie and he gives me a look. I already know what he’s thinking, sitting there questioning my cookie making skills. Well BOOM I proved him wrong and these are the words that came out of his mouth, “these may be the best cookies you’ve ever made, they are really really good”!!! Whooohooo, win for the wife!

 

Makes 20 cookies

HAPPY EATS!!

S’mores Cookies {aka cookie heaven}
 
Ingredients
  • 1 stick unsalted butter, room temp
  • ½ cup light brown sugar
  • ½ cup sugar
  • 2 eggs
  • 2 tsp vanilla extract
  • 3 cups graham cracker crumbs
  • 1 cup flour
  • 1 Tbsp baking powder
  • ¼ tsp salt
  • 2 cups chocolate chips
  • 10 full sized marshmallows, cut in half
Instructions
  1. Preheat your oven to 375 degrees.
  2. To a large bowl add the butter and sugars. Mix until well combined using a hand mixer.
  3. Add in the eggs and vanilla, again mixing until well combined, about a minute.
  4. In a small bowl mix together the graham cracker crumbs, flour, baking powder and salt.
  5. Add half the dry ingredients into the wet mixture, mix until mostly combined. Add the remaining dry ingredients in and again mix with the hand mixer until mostly combined.
  6. Add in the chocolate chips and mix with a wooden or rubber spoon.
  7. Using a small cookie scoop, scoop the dough out onto a parchment lined baking sheet.
  8. Take one ball of dough in your palm, gently press down then place a piece of marshmallow on top and another piece of dough on top of the marshmallow... like a cookie marshmallow sandwich.
  9. Press the dough together and roll in your palm like you would a meatball to ensure its closed well around the marshmallow.
  10. Place onto the lined baking sheet, about 2 inches apart, press down on each cookie ever so slightly.
  11. Bake for 10 minutes. {my tip: I find that the cookies bake up better when I only do 1 baking sheet at a time, starting the baking sheet on a rack in the lower half of the oven for 6 minutes then move it to a rack in the upper half of the oven for the final 4 minus}
  12. Allowing the cookies to set/cool on the baking sheet for a minute before moving them to a drying rack.
  13. Grab a giant glass of cold milk and enjoy these heavenly cookies!!!
