Baked Buffalo Chicken Dip

baked buffalo chicken dip Super Bowl Eats Week is still going! Quick recap of what we’ve had so far… S’mores cookies {drool!!!}, Pan Fried Pork Dumplings and Garlic & Herb Rolls! The deliciousness continues today! When you think football party, no doubt chicken wings come to mind but lets be honest, making wings for a crowd is a bit time consuming. This Baked Buffalo Chicken Dip gets you the same great flavors but a whole lot easier!! Chicken, hot sauce, ranch dressing {sorry, not a fan of bleu cheese}, light cream cheese & cheddar all whipped together, pop in the oven and bake until hot, bubbly and golden! A little scallion garnish and served up with pita chips and celery stalks. Finger lickin’ good just like a wing!

Baked Buffalo Chicken Dip
 
Ingredients
  • 2 cooked chicken breasts, rough chopped
  • 16 oz light cream cheese, softened
  • ½ cup ranch dressing {I used Annies Organic Cowboy Ranch}
  • ¾ cup Franks Red Hot Sauce
  • 1 cup shredded cheddar plus extra for the top
  • scallion, sliced for garnish
  • pita chips
  • celery
  • carrots
Instructions
  1. Preheat oven to 375 degrees.
  2. Add the chicken, cream cheese, ranch dressing, hot sauce and cheddar to a bowl and combine well with a hand mixer.
  3. Place the mixture into a baking dish, top with a little extra shredded cheddar and cook for 25 minutes until hot, bubbly and gorgeous!
  4. Garnish with sliced scallion and serve warm.

    Yum!!! Someone made something similar to this at a party recently and I’m pretty sure I took down about 3/4 of the pan myself!! Was looking for a recipe so that I could recreate it! Thanks!!
