Summer Corn Salad

Summer is officially here and I’ve got the perfect simple side dish for your next BBQ. It’ll take you under 10 minutes to make and looks beautiful with the colors from the corn, bell pepper, kidney beans and scallions. A simple dressing of olive oil, lime juice, salt and pepper is super refreshing on a hot day.  Lots of flavor in this Summer Corn Salad.

Summer Corn Salad


3 cans corn (drained but fresh even better if available)
1 can red kidney beans (rinsed and drained)
2 red bell pepper, small dice
1 bunch scallions, sliced
juice of 2 limes
4 Tbsp olive oil
salt & pepper

Toss the corn, beans, pepper and scallion in a bowl.

In a mason jar or a dressing bottle, add the lime juice, olive oil, salt & pepper and give a good shake. Toss to coat. Adjust seasoning to taste.

    The first time I made it, I made it exactly as is. And it was wonderful. The second time I made it, I left out the olive oil and just used the lime juice. And it was just as good! I was afraid it wouldn’t be enough dressing, but it was. We didn’t miss the olive oil at all.
