 Avocado, Tomato & Mozzarella Grilled Cheese

Hope you all have a wonderful day planned and enjoy the official summer kick off weekend! I’ve got a super simple meal for you this Memorial Day Monday. Threw this Avocado, Tomato & Mozzarella Grilled Cheese together for lunch one day last week. Its quick, easy and so yummy! I have a slight obsession with avocados and I’m pretty sure I eat way too many weeks but I could do worse! This is a simple grilled cheese using a multi grain english muffin, juicy tomatoes, wonderful fresh mozzarella and creamy avocados.

Avocado, Tomato & Mozzarella Grilled Cheese
english muffins
ripe avocado
tomato
fresh mozzarella
Heat up a panini press (or a pan if you don’t have).
Pile up the ingredients onto an english muffin, make sure you’ve got cheese on the lower and upper part of the stack to glue everything together. Season simply with salt and pepper.

Press until the english muffin is toasted and the cheese is ooey gooey!
