These Ricotta & Spinach Ravioli are so delicious and a bit of a cheat! Nope, didn’t whip out the Kitchenaid with pasta attachment…. wonton wrappers baby! This may look fancy but its really simple! A little bit of chopped up sautéed spinach, ricotta, an egg and a simple sauce made from San Marzano tomatoes. San Marzano tomatoes are not something I buy often, they are a bit more expensive then regular canned tomatoes. I figured since I was making a small pot of sauce and it would only be cooking for a little while I wanted to give these a try. They really are amazing! Sweeter and less acidic… really good tomatoes!
1 pkg wonton wrappers
1 1/2 cups part skim ricotta
4 handfuls of fresh baby spinach
1 tsp garlic & herb seasoning (I use Tastefully Simples Garlic Garlic)
1- 28 oz can San Marzano Whole Tomatoes
5 cloves garlic, smashed
a few fresh basil leaves
salt & pepper
This is a very basic and simple sauce. In a pot, over medium heat, add a few drizzles of olive oil and the garlic cloves. Once lightly golden go ahead and add in the tomatoes and basil. Using an immersion blender puree the sauce to the consistency of your liking. Season with salt and pepper. Simmer for 30 minutes.
In a small sauté pan, over medium low heat, add a drizzle of olive oil, the spinach and garlic seasoning. Cook until just wilted. Remove from pan and give it a good chop.
In a bowl mix together the egg, ricotta, chopped spinach and a little pepper.
Lay out 1/2 the wonton wrappers and place about a tsp of the filling in the center.
Now to seal them, get a little bowl of water, using your finger wet all four edges of the wonton. Place another wonton wrapper oven top pressing the edges together well. Pop them in a single layer onto a flour dusted lined baking sheet. Refrigerate until you are ready to cook them.
These cook up super fast, they will only take 3-4 to cook in boiling water. Cook them in small batches because they will stick to each other, so also stir them around a bit as they cook. Remove the ravioli, plate them and top with your delicious sauce.
