Whether its an easy grab and go lunch or a light dinner, this Turkey Ranch BLT is a great go to! A handful of really tasty ingredients and you are set!

Remember that roasted turkey I used for the Turkey, Broccoli & Wild Rice Casserole? Well lets make some more use out of it shall we (and no worries, this works with leftover chicken too!).  Even after the casserole and sandwich I still have a little left… i’m thinking turkey pot pie to finish it up!  Today, this beauty of a sandwich! Turkey BLT! I have a love of bacon, especially in a sandwich. I wanted to throw together a quick meal using leftover meat again and let me tell ya, this is a yummy one!!! Flavorful roast turkey, salty crunchy bacon, tomatoes, spring mix greens and ranch dressing, doesn’t get much easier!

Turkey Ranch BLT
 
2 pita pockets, cut in half
bacon, I only use Applegate Farm Bacon
spring mix greens
2 tomatoes, sliced
sliced roast turkey, about 4 thick slices
ranch dressing (I like Kens Light Ranch)
Brush the slices of turkey with ranch dressing.
Stuff each half of pita with a a few slices of tomato, greens, a slice of turkey and a slice or two of bacon.
Yup, thats it… now throw some chips on your dish and enjoy your super yummy sandwich!

    This is amazing! Such a fun take on an oldie, but goodie! Can’t wait to have it again, and I’m only halfway through the sandwich! 🙂
