Pumpkin Mashed Potatoes

When Fall comes around pumpkin becomes a big thing! I thought it would be fun to combine pumpkin & mashed potatoes… Pump[kin Mashed Potatoes makes for a delicious twist inspired by Fall.

I sometimes find myself stuck on coming up with different quick sides that are tasty and healthy for the fam. Pumpkin Mashed Potatoes comes together crazy fast, is super flavorful and full of good for you veggies! I use pumpkin in here making it even more perfect for the Fall! Its a combination of russet potatoes, sweet potatoes and pumpkin puree… the result is fabulous!

1 russet potato, peeled and diced
2 sweet potato, peeled and diced
1 cup pumpkin puree
2 Tbsp butter
1 tsp ground cinnamon
salt and pepper
Add the potatoes to a large pot of cold water. Bring to a boil and cook until fork tender. Drain the water, leaving the potatoes in the pot.

Add in the pumpkin and mash until smooth. Add in the butter and cinnamon and stir to combine. With the heat on low, warm the mashed pumpkin & potatoes through. Season with salt and pepper.

These are perfect alongside chicken, pork, steak, turkey… heck they are good enough to just eat straight out of the pot on their own!

      Thx! It was sort of an accident. Had some pumpkin left over from making pie and figured that would blend in quite perfectly with the sweet potatoes! Enjoy!
